Ingredients
  

  • Portuguese roll
  • 2 boneless and skinless chicken breasts
  • ¼ cup peri-peri marinade store bought or homemade
  • 1 head of lettuce shredded
  • 2 tomatoes sliced thin
  • Mayonnaise to taste

Instructions
 

  • Place the chicken in a shallow dish and pour over the peri-peri marinade. Cover with plastic wrap and set aside for 1 hour to allow the flavors to develop. Uncover after an hour and discard any remaining marinade.
  • Heat a large skillet over medium heat and add the chicken when hot. Cook for 6 minutes on each side until cooked through completely; remove from heat and let cool slightly before slicing into strips or cubes.
  • Slice open a Portuguese roll lengthwise but still keep it attached at one end; spread mayonnaise onto both sides of the bread evenly then layer in lettuce, tomatoes, and sliced/cubed chicken pieces according to preference. Close up sandwich securely with toothpicks if needed before serving immediately!
